I like Salon. It's my favorite Champagne, but I do not get any sense of value in the 1997. Medium bodied, fresh, mineral driven, sweet citrus fruits, with an intriguing hint of raspberry, brioche and nuts, the wine is creamy and refined, but not exciting. The texture paired creaminess with acidity and length to keep this interesting all the way through. This was incredibly young and fresh and vibrant, it's hard to believe it's already 20 years of age.
